Fresh Dill Chicken Salad

Simple, Easy, Satisfying.
This is one of our favorite Low-Carb lunch meals simply, easy to make (no cooking required) and its delicious. The key ingredient is the use of Fresh Dill.
INGREDIENTS:
- 1 lb Rotisserie Chicken
- 4oz Goat Cheese Crumbles
- 1 1/12 cups Mayo
- 1Tblsp Dijon Mustard
- 1tsp Apple Cider Vinegar
- Garlic Powder 1-2 pinches(to taste)
- Pinch of Salt
- Fresh Dill
This should be enough for a few servings, we like to double the recipe to have quick, grab and go Keto friendly meals for the week.
Steps:
- For even more ease you can buy precut/chunked fresh rotisserie chicken in the deli section of most stores. If not deskin the chicken and cut it into approx. 1in squares or chunks. Use a hand mixer if you like shredded chicken!
- Mix Chicken, Goat cheese, Mayo, Dijon, and Apple Cider vinegar into a large bowl. Mix thoroughly.
- Add Salt and Garlic Powder to preferred taste, usually a few pinches each should do it. Then pick and cut your fresh dill and add a few pinches, we prefer a little more than others may so start with a pinch or two. It seems to get slightly more flavorful overnight.
Make enough for the family and store it in easy to grab meal containers. Nothing like fast simple meals to help you stay on track with your low carb dieting!
